Oatmeal Cran-Raisin Cookies:
2 cups old-fashioned Quaker oats
1-1/3 cups Flour
¾ tsp baking soda
½ tsp baking powder
½ tsp salt
1 cup cran-raisins
1 cup packed brown sugar
¾ cup (1-1/2 stick) butter
¼ cup granulated sugar
1 egg
1 tbsp honey
1 tsp vanilla
1. Preheat oven to 350F. Line cookie sheet with parchment paper. Combine oats, flour, baking soda, baking powder, salt and cran-raisins in medium bowl.
2. Beat brown sugar, butter and granulated sugar in large bowl with electric mixer at medium speed
until well blended. Beat at high speed until light and fluffy. Add egg, honey and vanilla; beat at medium speed until well blended. Gradually add flour mixture, about ½ cup at a time. Do not overmix dough or it will become too soft.
3. Drop dough by tablespoonfuls or cookie scoop at least 2 inches apart onto a prepared cookie sheet. Bake 11 to 15 minutes or until cookies are puffed and golden. Do Not Overbake. Cool on cookie sheets 5 minutes. Remove to wire racks; cool completely.
Makes about 3 dozen cookies
