I cheated today, and I had a hot pocket. Now I only have 375 calories left. Does anyone have a simple and cheap recipe I could make for dinner? I'm just cooking for myself.

This is what I had a few days ago because I needed to stay under 400 cals.

Ronzoni - Healthy Harvest - Whole Wheat Blend Pasta - Thin Spaghetti, 2 oz= 180 cals
Ragu - Light Tomato and Basil, 1/2 cup = 50 cals
Corn - Sweet, yellow, canned, whole kernel, drained solids, 1/2 cup = 70 cals

    = 300 calories (exactly!)

You could eat more veggies to get it up to 375...that will fill you up more anyways!
Or you could have a fruit, or a slice of bread? Whatever you feel you could use in your diet for today that would get you to your calorie intake amount. Good luck!
  • you could always just do a simple sandwich and salad, or maybe your favorite brand of frozen dinner. look around your kitchen- you'd be amazed at what all you can actually fit into three hundred calories!
  • Thanks :) I'm really new to this... I just had a baby in early September, so I'm trying to get rid of the jelly belly. And calorie counting is easiest for me right now.

If you're going for low cal, go for high quality. Remember things like bread will have a lot of calories in it and not give you the long lasting fill that you want. Eat things packed with vitamins (anything green, just not spoiled  ) and lean meats (unless you're a vegetarian, then no  )

There are a lot of things you can do to eat low cal. Congrats on your baby :flowerforyou:
  • Thanks for the info and the congrats (:

Sweet & Sour Chicken with a side of rice!!! This is so good my DH would rather have this stuff than go to a Chinese restaurant. He doesn't like veggies, so the recipe doesn't include any. Adding some green pepper and onion in the pan while you cook the chicken won't add too many calories.

    Ingredients
1 lb chicken breast cut into 1 in cubes
1/4 c frozen apple juice concentrate (thawed)
    1 tbsp cornstarch
    2 tbsp soy sauce
    1 tbsp apple cider vinegar
1 c pineapple chucks with juice
    1 tbsp brown sugar

    Directions
In a gallon baggie, combine apple juice concentrate and chicken. Marinate for 30 min, stirring frequently.

Coat a 10" skillet with no-stick spray and place over a medium-high heat until hot. Cook the chicken and the marinade for 5 minutes or until the chicken is no longer pink.

Place the cornstarch in a medium bowl. Add the soy sauce and the vinegar. Stir until smooth. Stir in the pineapple (with juice) and brown sugar. Add to the skillet. Bring to a boil. Cook, stirring frequently, for 3 min, or until the sauce thickens.

Run to your nearest supermarket/walmart and snatch up a Healthy Choice meal. They are very satisfying, and there's at least one with only 250 cals!

When I am in that situation and still want a solid dinner without limitations. I hit the gym and get about 400-600 calories from whatever I do.
