McDonald's Crispy Chicken Salad

I made oven fried chicken the other day and it tasted a lot like the crispy chicken at McDonald's...except that it's healthier, I know it's real chicken and I know what went into it.
I used this recipe: http://thewondertwins.blogspot.com/2011/10/mondays-menu-baked-fried-chicken.html except that I used about 44oz of chicken breast, cut into small strips and the same amount of flour/seasoning. I used seasoned salt instead of Season All since it was all I could find. I forgot the butter so I sprayed some PAM butter flavor spray on them to moisten the flour so it would crisp up. It didn't come out as crispy as it would have with the butter but it was still very good. Next time I'd probably use butter since I'm not a huge fan of the sprays and the crispiness in the post looks crazy tasty.
This made 16 salad sized portions for me at about 120 calories per serving (or double it for a heavy protein meal). I added it to baby spinach, chopped raw cabbage, sweet corn cut from the cob, chopped cucumber, chopped summer squash and a little bit of shredded cheese. I shook it up and didn't even need dressing.
Note: This is still pretty high in sodium so keep that in mind.

Mine too! Maybe it's a mom thing lol. I never got into the salads there after working there for a couple months in high school...all I can say is, buyer beware. I like this one since I have control over what goes in it. I'd probably cut out the salt next time...I think the seasoned salt probably has plenty. It's a good incentive to use up the local greens & veggies I get from my farmshare too0 -
