I have been making this "Chocolate Chip Meringue Cookie Recipe" for years now but today I decided to lighten it up a bit and use splenda. To my surprise it worked! I added almond extract for more flavor too! Only 11 cals a cookie!!! They taste amazing!!!
3 Egg Whites
1 Tbsp Dutch Powdered Cocoa
1/3 Cup Semi-Sweet Chocolate Chips
1 Cup Splenda
1/2 Tsp Vanilla Paste or 1 Tsp Vanilla Extract
1/2 Tsp Almond Extract
1/8 tsp Cream of Tatar
Preheat the oven to 300 degrees. Spray cookie sheets with cooking spray. Beat the 3 eggs, vanilla, almond and cream of tartar with an electric mixer in a large bowl until it forms soft peaks. Add the Splenda and beat it until the "fluff" becomes glossy. Fold in the cocoa until well blended. Fold in the chocolate chips. Using a spoon, drop the cookies on the pan, making 32 of them in all. Bake 25-30 minutes until the cookies are hard and have a slight brown tint on their bottoms. You might have to try one to make sure they are done. Just saying. haha
I did enter the nutrition info/recipe into the MFP database but I'm not seeing it when I search for it. Sigh.

I am definitely making these, they seem way too delicious not to. And almond cookies are one of my favorites. I might add some chopped almonds, though that would add to the calories.0
