    I just logged on, getting ready to make dinner. This is what I am having with my sweet potato tonight. I love them and they are the easiest thing in the world to make!!! I also used this mixture in quesadillas last night.

    Ingredients:
    Mrs. Grimes Black Beans No-Salt Added
    Green Giant Frozen Chopped Spinach
    Kraft 5 Cheese Italian Blend
    any spices desired (I used a little Mrs. Dash Garlic & Herb in this round)

    love them plain, roasted with a bit of olive oil.
    cut into half moon slices, toss with EVOO, and bake em' at 400 for about 20 minutes. flip em' around a few times while cooking.

    SWEET POTATO BURRITOS!

    Take 3 large sweet potatoes. Rinse & scrub them (don't dry) in water and throw them in the croc-pot. Cook on high for 4 hours.

    Remove skin (if you want) and mash with fork and use it for sweet potato burritos! SO GOOD! Add some lettuce, black beans, plain greek yogurt, salsa, and your favorite sauteed veggies! DELICIOUS!

    We make these often and always change up what we add to them. Sauteed peppers and corn in them are yumm-o! We also throw some rice in the rice cooker and grab some tortilla chips and we're good to go!:wink:

    I just made these,they are so easy, and everyone liked them. They were great for lunch in a WW pita.
    Sweet potato burger

    2 baked sweet potatoes
    1 can rinsed cannellini (white) beans
    1 egg
    salt / pepper/garlic/onions etc. to taste
    bread crumbs

    take the skin off the potatoes and mash. Mash the beans and mix them in. Add the egg and spices.Form a patty and coat with bread crumbs. Spray a pan with cooking oil- I guess you could bake them too, haven't tried that yet.

    I roast them with brussels sprouts, a little kosher salt, pepper, garlic; add in a little macadamia nut oil and you're good to go. Yum!

    I cut up some last night like fries, put them in a baggy with some olive oil and salt. Shook, then poured a cookie sheet and baked for about 20 minutes at 425. They were super yummy.

    Bake it... eat it... done. I add nothing to my sweet potatoes... they rock as is!

  • Sweet potato and butternut squash soup. I love it.

    Sweet Potato, butternut squash, vegetable stock, low fat creme fraiche and ground cinnamon to taste. It is lovely (and low calorie)
  • Use as you do with a regular potato... though cut the cooking time down a bit. French fries; baked; mashed; stews etc... the list is ENDLESS... search a recipe site and get ideas....

    Wrap in Reynolds Wrap and stab about a dozen times with fork...throw in microwave for 5-8 minutes depending on potato size.

    Allow to cool, eat plain.

    That's how I do it.


    Can we assume you mean plastic wrap??? Not foil obviously :)

    I prefer to boil them and then top with a little butter and homemade canned peach jam. OHH so yummy. Plus, I'm a lazy cook and this is easy.

    I love sweet potatoes! I roast mine in the oven with fresh rosemary, garlic, fresh black pepper and a drizzle of olive oil.

    Cut your sweet potatoes into chunks (about 2")
    Drizzle olive oil over them (just to lightly coat)
    Sprinkle on a pinch of fresh black pepper,
    Add a few sprigs of fresh rosemary and 3 or 4 cloves of garlic.

    Bake at 375 for about 40 minutes.

  • Cut into "chips" or "fries" spray with a little Olive Oil spritz, sprinkle with taco seasoning, and bake at 400 for 15-20 minutes.

    I cut my sweet potato in slices and I dice lots of garlic and pour 1 tbsp of olive oil then stringy them with fresh parley and fresh basil leaves non dry. Right now i am avoiding starchy carbs during my weight cut for many reasons.

    I like to peel and cut them up into french fries...coat with olive oil and bake until tender....yummy!

    I bake them and then add one of the flavored laughing cow wedges to it. It makes it cheesy and delicious!

    Homemade sweet potato fries! Toss them in some olive oil, black pepper and garlic salt and bake/roast in the oven.
