Clam Salad Wraps

I love clams and this makes a fast lunch or dinner. Recipe is very flexible so you can add whatever vegetables you have. If you are not dairy free, use greek yogurt. Use seasonings you have on hand. You can make this more or less spicy with the peppers and Sriracha sauce. I like it to have a little bite.

Clam Salad Wraps

Ingredients:

1 can chopped clams, drained
¼ cup finely chopped sweet red pepper
¼ cup chopped tomatoes, drained (I used sweet grape tomatoes)
1 Tablespoon So Delicious yogurt (gluten and dairy free)
1 Tablespoon low fat mayonnaise (Hellmann’s is gluten and dairy free)
Dash of Sriracha sauce (to taste)
Sprinkle of onion flakes or ½ Tablespoon chopped onion (or to taste)
Sweet banana peppers for garnish (optional)

Preparation:

1. Drain clams, chop red peppers and tomatoes
2. Mix with yogurt, mayonnaise and seasonings
3. Chill to set flavors (sometimes I’m just too hungry for this step)
4. Scoop into 4 lettuce leaves and garnish with pepper rings

    Thanks Dvsm. I would love to hear how you liked it or how you changed the ingredients. One person told me that she used tiny shrimp and steamed asparagus in her version and serves them on romaine. I use the canned clams in several recipes including a gluten and dairy free clam sauce over gluten free pasta.
