Help with servings (portions)

My calories for each day are 1800, however, when I look at various foods, I don't see servings based on 1800, but rather on 2000 calories. How do I make adjustments for this?

I see several options--just eat what you think you should, and stop when you hit your 1800 mark. Or exercise at least 200 calories per day and eat full servings based on the 2000. Or cut down on portion sizes by 10% (2000 calories, 10% is 200 calories, so if you cut servings by 10% you will be spot on at least in theory).0

The calories in the food will be the same, 100grams of something will have the same caloric value no matter what diet its based on, 1200 or 2800.0
