exercise calorie confusion.

Hi more than a little confused on the exercise calories and wether i should be eating them back. Dont have a vast amount of weight left to lose more about getting myself as fit and healthy as can be. Have upped my calorie intake from 1200 to 1400 as i feel more comfortable at this level. I am fairly active at the moment and only plan to get more active but am not sure how many exercise cals i should be eating back. I have one day complete rest , and then other days vary between 300 and (gym days) 1600 in exercise cals.

How much of the exercise cals should i really be eating back. 3000 cals a day seems a lot and what would i eat to make up that much in healthy food?? very confused !!
