Peppered Egg Quesadilla

From "Company's Coming - Healthy in a Hurry"

2 whole wheat tortillas
1/4 cup grated jalapeno Monterey Jack cheese, divided
1/2 tsp Canola oil (or cooking spray)
1/2 cup sliced fresh white mushrooms
1/4 cup chopped red pepper (or green)
2 large eggs, beaten with a fork (or equivalent egg beaters)
2 Tbsp chopped green onion
1/8 tsp pepper

Preheat oven to 400 F (205 C). Place 1 tortilla on ungreased baking sheet. Sprinkle with first half of cheese. Set aside.

In non-stick pan, heat canola oil and sautee mushrooms and red pepper until pepper is softened, about 2 minutes. Add eggs, sprinkle with green onions and pepper and cook for 2 more minutes until set. (The book says to just let it set like an omelet but I scrambled it and it was just as good).

Slide egg mixture onto tortilla on baking sheet. Sprinkle with second half of cheese and place second tortilla on top. Bake in oven for about three minutes until cheese is melted. Cut into wedges.

Serves 2.

    That's so awesome, and I keep most of those things on hand anyway! Just need to get some mushrooms and green/red peppers. :-) I'm gonna try making that for breakfast some morning.
