Hello,
I need a yummy gluten free summer salad receipe. Going to a wedding next month and it is pot luck. Bride is gluten free. Anyone have a good recipe?

Really almost any salad will work, just don't add croutons. Generally there isn't much in the way of gluten added to salads.
A friend sent me this recipe today, but I haven't tried it yet. Sounds delicious though.
CARIBBEAN SALAD :
4 cups chopped green leaf lettuce
4 cups chopped iceberg lettuce
1 cup chopped red cabbage
1 cup spinach or kale, or both
½ cup drained mandarin orange wedges
½ cup drained pineapple chunks
1/2 cup dried cranberries
(OPTIONAL) 1½ - 2 cups fresh fried tortilla strips (sub thin, broken tortilla chips, if preferred)
Honey Lime Dressing (9RECIPE TO FOLLOW)
Honey Lime Dressing
¼ cup honey (agave )
¼ cup dijon mustard
1½ tbsp. sugar
1½ tbsp. apple cider vinegar
1½ tsp. lime juice
1 tbsp. sesame oil0 -

YOu mentioned that the bride is gluten intolerant....I would not include the tortilla strips or if you do make certain that you use GF tortillas. My daughter must eat GF foods and I can tell you it is a challenge. You MUST read all labels....even if you THINK it does not contain gluten you would be surprised just how many things have wheat flour.....
I don't have the exact measurements but I always make the salad that is with fresh spinach leaves, strawberries, blueberries, feta crumbles, some toasted almond slivers on top and the dressing is a simple strawberry balsamic vinaigrette. Always goes over well.0 -

Pastas, breads crackers, wheat flour, rye, malt, barley, and oats are easily cross contaminated unless they are certified gluten free. But gluten is also found it all sorts of places. Sauces, (soy, teriyaki, bbq, tomato) canned soups, candy, ice cream, seasonings, Pringles all have wheat (makes me very sad btw).
Rice also has gluten, but it is NOT the same things and it is safe. That seems to be a really confusing fact for people.0
