Step-by-Step Veg Soup Recipes

Hey all,

I am going to start making my own soup each weekend and bring into work for my lunch, I think that is a healthy step in the right direction for me :wink:

But I need your step by step recipes cos I've never made soup before as I am useless in the kitchen :laugh:

BTW I live in Ireland so branded food/produce etc I wont be able to get..

So what soup recipes have you got?:flowerforyou:

    Easiest soup recipe ever...

    Saute veggies *This is super important for taste, you can use olive oil instead to cut calories.
    Add broth (chicken, beef, whatever you like)
    Simmer.

    It's really that simple.

    Leek and Potato Soup

    Makes 4 - 6 servings
    1 oz butter
    3 leeks sliced
    1 onion sliced
    8oz peeled potatoes cubed
    1 1/2 pints vegetable stock
    Salt and pepper to taste

    Cook the leeks, onion and potato in the butter for 3 mins. Add the stock, bring to boil and then simmer until the potatoes are soft. Blend. Taste and add salt and pepper to taste - not too much salt though!. My family loves this recipe.:happy:

  • Onions, carrots, celery, water.
    Simmer 30mins.
    This makes a basic delicious stock, then you can add anything to it and its healthier than any stock you can buy in store.

    Thanks lathode...I always want to make soup but never know how. Most people think making soup means pouring in a pre-made stock. I want to learn to make stock! I think I will go google it. If I come up with something good I will let you all know.

    this looked like a good site. I like the fact that she was very specific about what vegies not to use too much of and her tips on roasting. Let me know how it goes with your soup making.
