My "Mega salad" consists of the following:
lettuce
cherry tomatoes
sweetcorn (little spoonful)
chopped spring onions
beetroot
grated carrot
sliced red pepper
a boiled egg
and some cold meat on the side :glasses:
BOOOOOM!!!0 -
Try putting some kumquats on a salad if you can find them, they are kind of intense on their own, but on a salad they give it a pretty nice citrusy kick.0
-
iceberg lettuce, croutons, bacon bits and ranch! love it!0
-
Sliced strawberries, feta, pecans, grilled chicken, and strawberry/berry vinaigrette.
Great combo.
I prefer spinach for the greens so it isn't the nutritional equivalent of cardboard though.0 -
Romaine lettuce, purple onions, kidney or black beans, carrots, tomatoes, red bell pepper(red is my favorite, but any is okay), dried cranberries, nutritional yeast, and usually lemon juice instead of dressing. I sometimes will put avocado on it, but that's kind of a treat, not a usual thing. And I will sometimes use fat free salad dressing. I absolutely LOVE salad!0

My salad today was:
Spinach
Tomato
Grapes
Strawberries
Walnuts
Feta
Like 5 croutons
Lite Raspberry vinaigrette0 -
Romaine lettuce or I prefer lots of spinach, grilled chicken or a boiled egg..sometimes a side of salmon, carrots, lots of cucumbers, green onions, radishes, bell peppers, sometimes mushrooms,1/4 cup of garbanzo beans or soybeans, avocado, tomatoes.
I eat my salad with a splash of vinegar and lots of pepper.
I had a salad for lunch! :bigsmile:0 -
My fave right now is:
Arugula and/or spinach
1 ounce goat cheese
pickled beets (I prefer Lovebeets!)
salt/pepper
drizzle of EVOO
drizzle of vinegar
BUT, it doesn't need dressing at all really, if you cut/chop it well enough with the beets and cheese and S&P.
Sometimes I add some beans, but I get enough of those in the rest of my meals lately, so for me, lately, a salad get's to be a salad and doesn't have to be a meal.0 -
Lettuce, chicken, black beans, corn, salsa, & light ranch.0

grated khol rhabi is very nice on salad as is mooli (japanese radish) I keep a big pot by the backdoor where I grow mixed salad leaves like mustard and land cress (DONT grow this in open soil it's unbelievably invasive!)
Putting fresh picked stuff in salads makes an awful lot of difference even if it's just herbs out of a windowsill pot x0 -
Classic spinach - Baby spinach, red onions, white mushrooms, cherry tomatoes, bacon (optional), and crutons.
Pairs nice a with honey dijon or poppyseed dressing.0 -
Oh! Also Tabbouleh!
I love fresh parsley this time of year. I make it myself sometimes, but if you're looking for store bought, I highly recommend the Good Neighbors brand. It's my preferred ratio of veggies to grain.
I seriously, cannot wait to get home to some tabbouleh now.0 -

I keep plenty of fresh fruits, veggies and some meats for my salads.
Tonight's salad will have:

I usually have the same salad over and over but change dressings. Sometimes I might have lemon juice, other times I might have a Balsamic dressing or I might use a light salad cream, but I even make up vinaigrette bt I make it completely oil free! yummy x0

chicken breast, mixed salad leaves, macademia nuts, sliced mango and cucumber, lime juice and chilli dressing looked awesome.0 -
I eat a salad for lunch everyday – mixed greens, red bell pepper, cauliflower, carrots, zucchini, ½ avocado, tuna and sometimes some sunflower seeds. Never use dressing.0
-
My standard salad mix is

Radishes
to which I add a few of the following depending on the mood i'm in
hard boiled egg
bacon
diced pepperoni
shredded chicken
provolone cheese
pepper jack cheese
feta cheese
blue cheese
sliced almonds
pickled veg mix
hot pepper rings
olives
avocado

Today I made a sweet salad that was delicious.
Torn baby spinach
Quartered, pitted cherries
Then the dressing was
1/4 cup full-fat coconut milk
1/4 cup blueberries
1 tbsp olive oil
about half a tbsp of lemon juice
dash of cinnamon
all mixed up in the food processor (a blender would have worked better though)
And that was it. I was going to add grilled chicken, but I was too lazy. I think almonds would have been great on it, but we're out.0 -
Romains or leaf lettuce,
Spinach
carrots
radish
tomato
cucumber
hemp seeds
sunflower seeds
dressing of choice!0 -
Spinach, watercress and rocket. peppers, red onion, sweetcorn, cucumber, gherkin, Beetroot and grapes. Pine nuts and Balsamic Vinegar.
I usually have this with smoked Salmon or prawns0 -

I get so overzealous and put literally every vegetable I like in a salad... it gets gross because the flavors don't mesh well. I need to learn how to make "themed" salads, lol.0
-
My current favorite is: sliced stawberries, blueberries, slivered almonds, chicken chunks over baby spinach (or romaine) with Wishbone's veryberry vinegrette dressing. Yummy.0
-
I usually just throw whatever I have in my fridge in a bowl for lunch - romaine, spinach, snap peas, carrots (I use a cheese shredder and grate them into the salad), beets, radishes, dried cranberries or raisins, sunflower seeds or walnuts, and maybe a little cheese. I will also squeeze some lemon or lime juice on them. Sometimes I will add blueberries or whatever fruit is in season. I've also put mango, avocado, strawberries, melon, Greek yogurt, kale, celery, quinoa, barley, and really anything else.
I also made a great strawberry salad with spinach, strawberries, raisins, with a raspberry viniagerette dressing. Yum!0 -
My favorite salad is with walnuts (just a few chopped) feta cheese, craisins, and fat free raspberry vinaigrette. Also, love to go southwest style and mix salsa with fat free sour cream as a dressing. So good!0
