CALORIE HELP!

Hi all! I was wondering if anyone could help me out with some calorie counting! I am on my road to weight loss, and trying to do it in the most healthy way possible! As I mentioned in a thread I posted earlier...my biggest challenge is figuring out how many calories I should be consuming for maximum weight loss, and in a healthy manner.
I am a restaraunt manager of a local establishment, so I am on my feet 50+ hours a week....but have not really started any structurized exercise routine...so I don't really know what my calorie intake should be for MAXIMUM weight loss. If someone could give me an idea..it would be GREATLY appreciated. Thanks guys! xx
STATS:
height: 5'5
weight: 198
current BMI 32.9
Here is what I may eat on a typical day...which I think is a SUBSTANSIVE amount of food (snacks and meals)- but MFP says im still coming up almost 900 cals short of my goal? help! lol
BFAST: carnation instant bfast (sugar free) with skim milk
LUNCH: subway veggie deilght 6 inch, wheat bread, cheese and oil
DINNER: 2 gortons grilled fish patties with a cup of green beans
SNACK: rice pudding with crushed pineapple

Based on your stats and active job, i would have you are 1850 a day. I generally suggest 35% carbs, 40% prrotein and 25% fats.0
