    Where did you get really large zucchini and squash anyway, everytime i go to walmart or publix to look for them there always small or half the size and i can't make my zucchini boats :(

    I shred the zucchini and use it to make turkey burgers :)
    Sorry, don't have any ideas for the yellow squash though .

    the other night I made slices of zucchini, topped with sauce, mushrooms and a light sprinkle of reduced fat mozzarella cheese, you can cut in giant coins or half them lengthwise depending on how big they are. Mine were smaller so I halved lengthwise. Baked at 350 for 30 minutes (or until soft).....delicious and super low cal.

    Zucchini Boats

    Mix in a bowl:
    shredded carrots
    ricotta cheese
    parmesan cheese
    garlic powder
    finely chopped onions
    italian seasoning

    Cut the zucchini's in half long ways and gut out the insides
    once everything is done, put the mixings inside the boat and
    cook in the oven for 15-20 minutes then eat

    DELICIOUS

    Yum!

    oh and take the squash, shred them really fine and add it to the mixing...lol

    Mine have just been sauteed with butter and garlic, and they're going in a quiche with creme fraiche, lemon zest, mint and parmesan added to the eggs.

    Ok, I think I'm going to shred some for zucchini bread, make a lasagna which I can freeze in individual packages (great since I'm single), and just sautée the rest with a steak for dinner;)

    Turkey & Vegetables Skillet

    A quick, easy and low calorie turkey meal.
    Ingredients
    12 oz lean ground turkey
    3 medium whole tomatoes, chopped
    2 tsps dried basil
    2 tsps garlic powder
    2 tsps dried oregano
    1/4 tsp ground black pepper
    1/2 tsp salt
    1 medium onion, peeled and chopped
    2 medium zucchini, sliced
    3 tbsps tomato paste

    Directions
    1.Spray non-stick cooking spray in a large skillet.
    2.Brown turkey and onion over medium heat until turkey is cooked through and onion is soft, about 10 minutes.
    3.Add tomatoes, tomato paste and seasonings. Simmer over medium heat for 10 minutes.
    4.Add zucchini and cook for 5 minutes more. Serve while hot.
    5.Note: based on a recipe from Champions for Change.




    I made this two weeks ago and it was delicious.. Not enough for a couple days of left overs so I will be doubling the recipe tomorrow when I make again :)

    The other day I just roasted a bunch of veggies in the oven (I've also done the same thing but in a foil packet on the grill). I used:

    1/2 yellow bell pepper
    1/2 red bell pepper
    one yellow onion
    1/2 zucchini
    1/2 yellow squash

    black pepper, parsley, sage (to taste)
    tbsp of EVOO

    I ate the whole thing myself lol :blushing: another good recipe I've made before (that my whole omnivorous family LOVED) was something called Summer Cymlings. Summer Cymlings is the same thing as Yellow Squash, btw :) Here's the link:

    It all sounds so delicious. Definitely going to have to try the boats. ymmm. Normally, ours end up in stir fry with chicken.

    I love them shredded and mixed with a bit of pesto. A little sauce goes a long way so the calories don't have to be high. Sometimes I make a big batch using the shredder on my food processor. It's always a hit at barbecues. Last time someone started scooping it up in those little bowl shaped tortilla chips.

    Not enough people eat yellow squash I think. It tastes better than zucchini in my opinion.
