Pretzel Breaded Fish Fillets - gluten and dairy free
This pretzel coating will result in a crisp outer coating and a tender piece of fish. Use any fish you like, I used Sole. I purchase the Glutino gluten free, dairy free pretzel crisps which are great for munching and they make a great breading for your fish or chicken. This recipe is about 350 calories as written.

Pretzel Breaded Fish Fillets
Ingredients:
- 8 oz. fish fillets (I use Sole)
- 17 - 20 Glutino gluten free pretzel twists
- Butter flavored cooking spray
- Seasonings of your choice: salt, pepper, garlic powder, onion powder, hot pepper flakes, onion flakes, parsley, Italian seasonings. Pretzels are already salted, so you may want to omit adding additional salt
Preparation:
1. Preheat oven to 400 degrees
2. Prepare a cookie sheet, covered in tin foil and generously sprayed with a butter flavor cooking spray
3. Wash and dry fish fillets
4. Place pretzels in a baggie and using a flat bottomed glass or mallet, lightly pound the pretzels until they are crushed. Add seasonings of your choice and mix well.
5. Pour pretzel mixture onto a flat plate
6. Spray both sides of the fish fillets with butter flavored cooking spray.
7. Place the fillets, one at a time on the plate and using your fingers, press the breading into the fish on both sides.
8. Lay the fillets onto the prepared cookie sheet
9. Bake for 10 - 11 minutes and serve immediately. Avoid over cooking the fish because it will dry out.
