Cauliflower Planks
Cauliflower becomes sweet, mild and tender when you roast it. It is a great base for any type of vegetable/meat topping such as a Primavera sauce, browned ground chicken or beef with vegetables, poached or baked fish. Top with leftovers for a whole new meal!

Ingredients:
- 1 head of cauliflower
- seasonings to taste
- nutritional yeast or grated Parmesan cheese (if you can eat cheese)
Preparation:
1. Wash cauliflower and use a cutting board to cut the planks. Peel off the outer leaves and cut an edge of the stalk so you can hold the cauliflower upright.
2. Using a heavy, sharp knife, cut 1 inch thick planks from the cauliflower. Cut as many pieces as you will use.
3. For the smaller pieces, just shave a little off the smallest surface so they will lay flat. 4. Lay on a foil lined cookie sheet which has been sprayed with cooking spray.
5. Lightly spray both sides of the cauliflower planks with Olive oil cooking spray.
6. Season both sides with salt, pepper, and any seasoning you choose such as onion and garlic powder, or herbs
7. Roast in a 400 degree oven for 25 to 30 minutes or until cauliflower planks are slightly browning at the edges and tender when tested with a fork.
Just one tip. Use a sharp knife because the core is difficult to cut. Make your planks about one inch thick. Use the ends too, just shave a little off so they can lay flat.
