Roasted broccoli, my favorite recipe! Simple and yummy!

1 stalk of broccoli
1 tablespoon of olive oil
1 clove of Minced Garlic
1 whole lemon, squeezed
Kosher salt
Pepper

Chop raw broccoli into florets and pieces. Shake in a large bowl with salt, pepper, minced garlic, and the tablespoon of oil. Spread over a flat roasting pan. Roast at 450 for 30 minutes, or until browned. Remove from oven, pour into a large bowl, and then toss with the lemon juice. Serves two!

This is my favorite way to eat broccoli, it is simple and delicious!

    I love love love roasted broccoli! I usually do garlic and crushed red pepper flakes! Yum!

    I love roasted vegetables,,,,,,it really brings out the flavour. I have to admit I have never roasted broccoli and I so totally plan to try that out, thanks for the recipe.

    If you haven't tried roasted carrots......you must try......so delicious.

    GREAT TIP! Thanks! I'm anemic and I know that lemon juice on my broccolli will help me absorb the iron. But, I always forget to do that and, well, I don't really like it on raw broccolli. I'll try this, though.

    hmmmmmm.......... a thought now that some one mentioned bacon:-) Maybe this could be turned into the broccoli salad without using the mayo/sugar dressing. Toss with a little bacon, grapes and sliced almonds (and of course bacon). Make it a meal served on top of cooked sprouted brown rice or quinoa.
