No-Fry Fries - 129 Calories/Serving

I found this recipe on Pinterest, (link: http://www.self.com/fooddiet/recipes/2011/05/no-fry-fries) and I made them tonight for the first time as a side with some shrimp. They were so good! I didn't miss real fries at all. Even my husband loved them. They don't get dried out at all in the oven. They're a nice crispy-on-the-outside/soft-on-the-inside consistency without the nasty frying.
I wouldn't have them on a daily basis or anything -- high carb, obviously, because they're potatoes, but definitely a nice substitute every once in a while. The fat is mostly coming from olive oil, which isn't a terrible source for fats. According to how I made the recipe, the nutrition per serving is as follows:
Calories - 129
Sodium - 485
Carbs - 20
Protein - 2
Fat - 5
Fiber - 2
INGREDIENTS:
2 large russet potatoes (2/3 lb each), peeled
2 tablespoons olive oil
3/4 teaspoon coarse sea salt
NOTE: I used THREE potatoes, which I didn't peel. I also only used 1.5 tablespoons of oil. It was PLENTY, trust me. So, if you go by the actual ingredients listed, your nutrition info will be altered, obviously.
PREP:
Heat oven to 450°. Cut potatoes in half horizontally; cut each half into 1/3-inch-thick fries and place in a bowl of cold water. Remove from water and dry thoroughly. Toss with oil and sprinkle with salt. Place fries on a cookie sheet. Roast until browned and cooked through, turning occasionally, 25 minutes.
BONUS?! Cutting raw potatoes (at least with cheap knives like mine) is quite the arm workout. Dang! Still kinda sore.
