Any low cal/fat cake receipes??

My girls really want to do baking today but all the cakes i usually make are about 150+ cals per cake (before they get iced!!) does anyone have any receipes i could use? Dont want to cook what i cant eat!!!!

    I have a recipe for banana muffins (good for breakfast).
    The peanut butter probably has quite some cals in it, but it is good, healthy cals :).

    For 18 muffins:

    4-5 really ripe bananas
    1 cup raisins, soaked in apple juice
    3 cups of oats
    1 tbsp cinnamon
    1 tbsp baking powder
    1/2 cup peanut butter

    Mash the bananas. Add the other ingredients and stir well.
    Pour into greased muffin tin and bake for 25 minutes at 180 degree C.


    And egg free brownies, that are a bit more calorie dense, but still really delicious :):

    1 cup apple sauce
    1/2 cup brown sugar
    1 tsp vanilla extract
    3/4 cup flour
    1/3 cup cocoa powder
    2 tsp baking powder
    75 gr dark chocolate
    1 pinch cinnamon

    Chop the chocolate into small pieces.

    Mix the apple sauce, brown sugar and vanilla extract in a bowl.

    Mix the flour, cocoa powder, baking powder and cinnamon in a bigger bowl.
    Add the apple sauce mixture to this and use a fork to stir into a smooth mixture (couple of lumps don't matter).

    Add the pieces of dark chocolate into the mixture and stir a bit.

    Pour this into a greased baking tin of about 20x20cm and spread it out using the back of a spoon.

    Bake in the oven for 25 minutes at 180 degrees C.

    I'd suggest a fat-free tea cake but that the original recipe is still high in sugar because it uses sultanas and dried fruits (though I don't use them as the cake gets too sweet for my taste).

    I'd made the below cake and it turned out okay but I didn't use Splenda as I don't favor Splenda's taste even with vanilla. If you use sugar add +30cals~ per mini cake.

    1 egg
    1/4 cup fat-free buttermilk
    3 Tbsp butter, melted
    Dash of vanilla
    1/2 cup flour
    9 packets of Splenda (or 6 Tbsp sugar)
    1/2 tsp. baking powder
    1/8 tsp. baking soda
    1 can of crushed pineapple (won't use that much)
    Pinch of salt

    Preheat oven to 350 degrees. Brush cupcake pan with butter and sprinkle brown sugar in the bottom of each cup along with a bit of crushed pineapple. Whisk egg, buttermilk, melted butter and a dash of vanilla in a bowl. Stir in flour, Splenda, baking powder, baking soda and a pinch of salt. Divide mixture into each of the cups. Bake for 20 minutes and let cool. Unmold the tea cakes and top with additional pineapple, cherries and a bit of confectioners' sugar. Enjoy!

  • Saw this on Dr. Oz. He had "The Hungry Girl" on as a guest. I tried the recipe and made cupcakes instead of cake. They were moist, light and delicious!!

    1 (18.25 oz) box moist-style dark chocolate cake mix

    1 (12 oz) can club soda

    Directions

    Preheat oven to 350° F. Spray a 9-inch by 13-inch baking pan with nonstick spray. In a large bowl, whisk cake mix with soda until smooth. Pour into the pan. Bake until a knife inserted into the center comes out clean, 30 to 35 minutes. Slice and enjoy!
