Sauteed Grated Beets

Grated Sauteed Beets Recipe #66553
Sometimes less is more, and that is certainly true for these simple beets.

SERVES 4
* 4 medium beets
* 4 tablespoons butter
* fresh lemon juice
* salt and pepper
* chopped fresh dill or parsley
1. Wash, peel and coarsely grate beets.
2. In a covered frying pan, melt butter then add the beets, stirring to coat with the butter.
3. Squeeze some lemon juice to taste over the beets.
4. Cover and cook over low heat for about 10 minutes or until beets are just tender.
5. Check often to make sure beets are not burning, and add a few drops of water or broth to the pan to prevent sticking.
6. Season with salt, pepper and herbs.
I copied this recipe from recipezaar. it is similar to mine except I use lime juice and don't cook for quite as long. It certainly takes the time out of cooking beets and is super delicious :bigsmile: Love those beets

You can definitely cut down on the butter in the recipe if you want and it will only shave of calories and fat.
I made it last night with one giant beet ( nearly 2 cups when grated) I used 1 Tbs of butter for all of that and juice of 1 lime! It made 2 very generous servings with a bit left over.:happy:
