I think I'm eating too many carbs, but I'm finding it hard to reach 1700 - 1800 calories (that's what I'm trying for now to see if that works to lose weight since I've been eating everything between 800 - 1500 for weeks at a time for the last year and I haven't seen any results), but anyways, I find it hard to reach that many calories WITHOUT having a decent amount of carbs. I'm keeping my carbs low (only 13 according to MFP) at dinner.

Increase the peanut butter and cut out some of the carbs if that's your goal. I see you're already doing that to a small degree. That's an easy trade for less carbs and more calories. I had to add in more pb myself since I switched to a 16/8 intermittent fasting plan. Squeezing in 2500 calories in an 8 hour window isn't easy without feeling stuffed some days. When I feel too full but need more peanut butter does the trick.
Okay, now I'm craving peanut butter.0
