Spice my quinoa!!

I'm making a pistachio crusted chicken breast tonight with quinoa as a side. I'd like it with a bit of flavor. As far as supplies go, I have most of the basic spices, along with cream of chicken (??). I'm just not sure what to do with it. Suggestion please!

    Almond crusted what??

    Here's what I'd do -

    Crushed almonds
    Shallots
    Garlic
    ... sautee in olive oil and then toss with quinoa...


    If you're making fish, add some thyme and maybe a squirt of lemon
    If you're making beef, maybe half a can of crushed tomatoes to the sauteed veggies, then simmer reduce any juices
    If it's pork, you could add dill or rosemary
    Chicken? hmmm... anything, really would work. I'd probably go heavy on the garlic and add lemon, rosemary and thyme.


    And don't forget the salt and pepper!

    cook it in low sodium chicken broth. Add Garlic powder to your taste and onion powder. When its almost cooked (per the bag it comes in) throw in some green peas until tender (or skip the peas if you dont like them). Its sooo freaking good!

    black, green and white pepper + saffron + coriander seeds
