A few quick and fun (and healthy) recipes for picky kiddos?

My son was a champion eater, until he was about 2.5 years old. Now, having just turned 4, he's eating less and less of the greens and healthy grains and meats I would like him to. He's not a huge fan of meat in general, but occasionally we will grill him an all beef hotdog and he eats it.
My husband and I are trying to eat a lot healthier and I would love for my son to eat the foods we eat, but I realize this is going to be a process, in which we have to introduce some of the super healthy, clean foods back in his diet and get him to eat these things again.

Anyone have a few quick and kid-friendly dinner options for me to try?

    Have you tried the smoothie idea? We do a mixture of berries, bananas, nut butter, and spinach along with almond or regular milk. Sometimes I throw frozen yogurt or flax seeds in there. The fruit hides the takes of the spinach and that will help get the nutrients in.

    I haven't. I'm not a big smoothie person, myself. But, if it helped B eat better, I would be all for trying it!

    I would definitely recommend Ellyn Satter's books on kids' eating. I find it super helpful in dealing with picky eaters. Basically there should be one thing on the table that your kid likes, no pressure to try anything else. So it's okay if you are giving your kids things they don't like, they will try it (and most likely LIKE it) eventually, no need to stress about making things specifically for your picky kid.
