    I'm sure many of you have heard of this, but I will post it anyway so you have another option besides mashed potatoes. I will post their recipe, but I honestly make it as easy as possible. I use one bag frozen cauliflower, steam it, drain, add a little bit of fat free milk, Parkay 0 calorie fat free butter spray, garlic, salt and pepper. Then I mash it until smooth. Always turns out great!

    Surprise South Beach Mashed "Potatoes"
    4 cups cauliflower florets pinch of salt
    2 tablespoons trans-free butter spray pinch of ground black pepper
    1 ounce fat-free half-and-half

    Makes 4 servings

    per serving: 60 calories, 1 1/2g fat, 1/2g saturated fat, 3g protein, 11g carbohydrate, 3g dietary fiber, 5mg cholesterol, 105 mg sodium

    Maple Roasted Sweet Potatoes

    12 servings, about 1/2 cup each

    Active Time: 10 minutes

    Total Time: 1 hour 10 minutes

    INGREDIENTS
    2 1/2 pounds sweet potatoes, peeled and cut into 1 1/2-inch pieces (about 8 cups)
    1/3 cup pure maple syrup
    2 tablespoons butter, melted
    1 tablespoon lemon juice
    1/2 teaspoon salt
    Freshly ground pepper, to taste

    PREPARATION
    Preheat oven to 400°F.
    Arrange sweet potatoes in an even layer in a 9-by-13-inch glass baking dish. Combine maple syrup, butter, lemon juice, salt and pepper in small bowl. Pour the mixture over the sweet potatoes; toss to coat.
    Cover and bake the sweet potatoes for 15 minutes. Uncover, stir and cook, stirring every 15 minutes, until tender and starting to brown, 45 to 50 minutes more.
    TIPS & NOTES
    Make Ahead Tip: Cover and refrigerate for up to 1 day. Just before serving, reheat at 350°F until hot, about 15 minutes.

    Per serving: 96 calories; 2 g fat (1 g sat, 0 g mono); 5 mg cholesterol; 19 g carbohydrates; 1 g protein; 2 g fiber; 118 mg sodium; 189 mg potassium.

    I dont have the recipe on hand, but I found an awesome recipe for mashed turnips & rutabaga. Yummm!!:wink:

    White Chocolate Chip Pumpkin Cookies

    A friend of mine gave me this recipe and I changed it to be a little lower in sugar. But I used real butter since we didn't have margarine. :laugh: Oh well!

    2 cups flour
    1 cup oats
    1 tsp baking soda
    1 tsp cinnamon
    1/2 tsp salt
    1 cup margarine, softened
    1 cup packed Splenda brown sugar blend
    1 cup Splenda
    1 egg
    1 tsp vanilla
    1 can pumpkin
    1 cup chocolate chips (can be any flavor)
    1 cup nuts/raisins (optional--didn't use these, but i heard pecans are good)

    Oven temperature 350 degrees
    Bake 20-25 minutes
    Yields ~18 BIG cookies (use 1/4 cup scoop and spread)

    Combine flour, oats, baking soda, cinnamon, salt.
    Cream margarine and add sugar gradually, beating until light and fluffy.
    Add egg and vanilla; mix well.
    Add dry ingredients and pumpkin gradually, alternating between the two. Mix well.
    Stir in chips/nuts/raisins.

    Drop 1/4 cup onto greased cookie sheet or parchment paper and spread. Bake 20-25 minutes until firm and browned.
    You can use spoons to make smaller cookies.
    These come out very soft and biiig!
