Hiya - diabetic, vegetarian, gluten-free

I am brand new to myfitnesspal! I"m a 38 year old female. I don't need to lose weight, but my nutritionist suggested this website for easier tracking of carb and protein intake. I am diabetic, so I have to limit my carbs. I am vegetarian by choice, so I don't eat any meat (but I do eat eggs, dairy, etc.). My nutritionist suspects I'm gluten intolerant and TODAY I have started a new diet incorporating all these aspects. Wish me luck!
I was wondering if anyone else out there is like me and if you have any advice, food recommendations, or recipes? This is looking kind of hard right now, but I am determined to do it. But I'm hungry :laugh:
I think the hardest part will either be not eating out at all or finding somewhere to eat out at. The majority of my food intake was from restaurants and I'm finding it impossible to find anywhere that sells low carb, vegetarian, gluten-free food. Or I just can't face paying $5-15 for a salad I can make at home!
At first, when my nutritionist told me I may be gluten-free, I was kind of upset. Finding out I was diabetic was kind of devastating even though it runs in my family. I had to overhaul my whole life to accomodate that. In hindsight, it was a great thing (but hard to go through at first). I chose to be vegetarian two years ago and mostly it was a relief. But I have moments of weakness (oh, how I love the smell of bacon...). And now possible gluten intolerance. What else is there left for me to eat?! Now I feel positive toward the situation. I look at it as an opportunity that "forces" me to become healthier, make better food choices, be an example for my small children, and ultimately impact their lives in a healthy way. I see it as a challenge so I'm digging my nails in and I'm going to succeed!
But any advice, encouragement, or just sharing your story would be greatly appreciated. Thanks!

You should check out Dr Fuhrman's website. If you're Type II, his diet has gotten lots of people off of their medications. His eating plan is called "Eat to Live". It's a near vegan plan so it should fit nicely with what you're doing.
