Rice puddings/meals anything ... collating ideas!

Hi all,

I've been making and eating alot of rice lately due to dietary requirements and was wondering if anyone has some great creative ways of eating it?

My favourite at the moment is banana rice pudding:

1 1/2 cup Cooked rice, milk, 1/2 cup sugar, 1/2 tsp vanilla, 1/2 tsp cinamon and 2 bananas.

Cover rice with milk, add other ingredients and chopped banana, bring to boil and then simmer until creamy and tasting great!

    That sounds SOOOO good...but 1/2 cup of sugar...that wouldn't quite fit my dietary requirements LOL :ohwell:

    maybe try it with splenda to cut a LOT of calories! might have to try that one!

    Or a tbs of agave nectar to replace sugar. :) (Well, adjusted to personal taste)

    Yea, that would be a good meal for a carbup.

    I have actually made meatballs and marinara and put it over brown rice. It's really good!
  • I do stir-fry over rice. Just heat up some frozen stir-fry veggies in a skillet with ginger, garlic, and a little amino acids, and sometimes with chicken, sometimes with tofu or tempeh. Serve over the rice and if you needs more saltiness add a little more amino acids or soy sauce.

    I also put refried beans, cut corn, salsa, and fat free plain yogurt over brown rice and eat with tortilla chips... or without the chips.

    I like making lentils and rice too. Just put a 16oz bag of lentils (2.5 cups) with a cup and a half of brown rice, bring to a boil, reduce heat and simmer for.... I think 25 minutes? Can't remember for sure but just check for when they've softened up. Nutrition info is on here under Miracle's Plain Lentils and Brown Rice. I like to eat a cup of it with 1/4 cup mozarella cheese, little garlic powder, and topped with tabasco sauce. Yummo! And ridiculously healthy. Sauteed Onions and plain yogurt are also delicious on this (without the tabasco and cheese).

    I also will use leftover plain brown rice in the morning by heating it up with about a third cup of vanilla soymilk, cinnamon, tsp brown sugar, and a 1/4 cup raisins. MMmm...

    I eat a lot of brown rice... :smile:
