First of all, I would not classify them as brownies - they are more like cake. When I think of brownies I think of ooey and gooey - these were very cake-like.

Alright, I'm no expert, but I believe what makes things ooey gooey is oil and butter. :ohwell: BUT, I'd think that if you leave out some of the egg in the recipe, they won't be so much like cake. Oh, and undercooking them a little would result in more ooey gooey as well.

My favorite go-to pumpkin recipe is:

1 box devil's food cake mix
    1 can pumpkin
    1/4 cup water

These do turn out ooey and gooey so I was hoping for the same in these "brownies" I do agree though, butter and oil do generally make things better :grumble: and I also agree with not cooking them as long might have helped. Set my timer for 20 minutes (recipe says 25-30) and they were done. A couple minutes less may do the trick.

These were good - more cake-like than brownie, but that is due to the small oil amount and egg whites. My husband liked them and he's not watching what he eats. I'm going to up the spices next time, I think.
