what do you make on the weekend to eat throughout the week?

I'll bet I'm not the only one who doesn't have time to cook during the week. I like to cook a bunch of food on Sundays to eat throughout the week. Others who do this: what do you make? I'm particularly interested in those who eat clean, but would be grateful for all suggestions. Thanks in advance!

i make a huge chopped salad of kale, and then a variety of other things like bell peppers, carrots, cucumber, red onion. usually i top it with a little fat free feta and balsamic vinegar, maybe another day some kind of nuts or fruit, and by the end of the week, when the kale starts to wilt, i saute it or add some protein (tofu/chicken/shrimp) and turn it into a stir fry.0

I make a slaw with mango, red onion, and veggies. The sauce is plain yogurt, chili sauce, and some lime juice. I put it on turkey burgers, sandwiches, or just eat a bit at a time through the week as a snack.0

I do a lot from this site. I use chicken in place of turkey though (personal preference)

I certainly do most of my cooking on the weekend! This weekend I'm making zucchini bites, oatmeal muffins, irish guinness beef stew, ham and spinach quiche cups. I also need to whip up some more homemade peanut butter and homemade Larabars, probably peanut butter.0

Whole wheat pancakes. I make large amounts on the weekend and eat it during the week.0

Some stuff I make up:
- a few batches of yogurt (vanilla with fruit, coconut oil, some steel cut oats; plain with chocolate protein powder, coconut oil, some steel cut oats)
- savory oatmeal (steel cut oats prepared like risotto, using broth and slow cooked; I take a half cup with me to work with an egg and some cheese - usually parmesan - and olive oil. Poach the egg in the oats as they reheat - brilliant for breakfast)
- baked egg scramble cups - scrambled eggs, veggies (peppers, onions, mushrooms, spinach), and a meat in a muffin tin and baked. After they've baked, I put them in a sealed bag and pop them out at will
- chicken salad using lots of fresh diced veggies (I like to finely dice carrots in mine for extra crunch) and plain greek yogurt instead of mayo
- a dozen boiled eggs
- a few pre-pan-seared pork chops
- clean-eating's apple and cabbage slaw - SO GOOD! I add pecans and craisins for added dimension.
This will get me through a pretty decent work week, covering breakfasts, lunches, and snacks pretty handily. Sometimes, I don't even need dinner if I do this ^__^0 -
I used to make soy milk but haven't done that in a while.
I usually cook a large batch of beans and/or a main dish for the next few days. I do cook during the week, once or twice.0 -
What I make during the weekend for a typical week:
1) Hard-boiled eggs.
2) Salmon filets seasoned with paprika and no-salt lemon pepper seasoning. Pan-fried with cooking spray.
3) Quinoa -- lots and lots of quinoa. I eat it with at least one meal every day.
4) Turkey patties seasoned with garlic, onion and egg. Pan-fried with cooking spray.
5) Chicken salad (lean chicken breast boiled and shredded; mixed with 0% plain Greek yogurt, pumpkin seeds and quinoa).0 -

I bake 4 lbs of chicken breast. steam about 3 lbs of mixed veggies, boils 1 lbs of pasta, & prep 3 lbs of cauliflower and brocolli. I then assemble everything each night for my lunch the next day. I also add 1/2 cup of cottage cheese & 28 g of almonds.
Nom nom nom, I love my lunch.
It breaks down like so:
8 oz chicken breast
200 g mixed veggies
2.2 oz pasta
3 oz cauliflower
3 oz brocolli
122 g 2% cottage cheese
28 g almonds
I tend to eat the same lunch even on the weekends because I enjoy it.0 -

Make a big pot of healthy soup

all my meat, i pre cook-chicken,beef ,turkey
cookies- made with coconut flour and coco and homemade energy bars
breakfast- pancakes, mebs (egg,bacon muffins)
lunch- i was all my veggies and pre pack them0
