400 Cals to burn on dinner - suggestions?

Options
I've got about 400 calories allotted for dinner tonight and trying to get out of my rut of eating same old foods. What are you all having for dinner tonight?

I'm making chicken tacos for the fam, but am having a chicken salad myself. I'm expecting it to come in around 400, if I don't double on up cheese in order to meet my dairy requirements.

Roast it in the oven with a little evoo, salt, and pepper. Right now I've been using acorn sliced in half and roasted at 350 for about 45 minutes to an hour. Of course you can dice it up and it'll take a lot less time.

Never made eggplant - not sure I would know how to pick a good one at the store! Will have to try it!

Thanks everyone - still not sure what I'm having but you've given me LOTS of great ideas. I think I'm leaning towards fish but then again that omelet is sounding really good!

I could very easily (and DO very easily) live on breakfast foods
