I've got about 400 calories allotted for dinner tonight and trying to get out of my rut of eating same old foods. What are you all having for dinner tonight?

Salmon, spinich salad, and roasted squash.
  • I'm making chicken tacos for the fam, but am having a chicken salad myself. I'm expecting it to come in around 400, if I don't double on up cheese in order to meet my dairy requirements.
  • Salmon, spinich salad, and roasted squash.

How do you prepare your squash???

Turkey meatloaf and homemade mashed potatos (made w/ skim milk and 1/4 butter) and steamed green beans.

Do share recipe for the garlic cheddar biscuits! Sounds wonderful!

Roast it in the oven with a little evoo, salt, and pepper. Right now I've been using acorn sliced in half and roasted at 350 for about 45 minutes to an hour. Of course you can dice it up and it'll take a lot less time.

OMG - this sounds great too!

Breakfast is always good and filling. How come breakfast always sounds better after noon?

Never made eggplant - not sure I would know how to pick a good one at the store! Will have to try it!
  • Thanks everyone - still not sure what I'm having but you've given me LOTS of great ideas. I think I'm leaning towards fish but then again that omelet is sounding really good!

I could very easily (and DO very easily) live on breakfast foods
