Gluten Intolerance

I went to my doctor yesterday and he suspects I have a gluten intolerance. He suggested I eliminate gluten from my diet for the next week and then see how I feel. I started today, gluten-free, and my stomach feels AMAZING!

I know there are tons of options for me out there, but I'm not sure exactly what they are.

Just a little info:

- loooove fruits and veggies; any kind
- eat minimal meat; tuna and chicken on occasion
- tofu lover here as well

I'm finding it hard to fit in enough fiber. How do you do it?

    Flaxseed has fiber.. and I believe is gluten free. There are also whole grain gluten free breads (typically organic and frozen).

    I, too, have had to deal with both gluten and dairy intolerances (as well as a dairy allergy) since 2000.

    It ain't easy!

    Ener-G foods has a reasonably good bread range that is fiber-rich. I don't have any issues getting fiber as I stick mostly to fruits and veggies. When I eat rice, I eat brown or brown and wild rice, which has more fiber. When I buy my GF pasta, I make sure it's brown rice or Quinoa pasta, Quinoa is gluten-free and has more fiber than brown rice.

    To keep weight down, though, I also check out the sugar level in all the foods. To get taste, companies often really up the sugar in order to compensate for additives they can't use, so be careful there.

    The various sites offered are great. I used to carry a list around with me so I knew what to look for. After this many years, I don't need it anymore.
