Sodium and Potassium intake?

I've been trying to cut my sodium intake down by elimating processed foods and cut down on my cheese intake. I read on another thread that MFP setting of 2500 is too high and it should be lowered to 1800 or 1500. Also on the thread people were talking about making sure your reach your potassium goal to offset your sodium intake, can someone explain this to me? Does meeting your potassium goal help when you tend to be on the higher end of sodium intake? Thanks in advance.
