Homemade Foodgasmic Creamy Cheesy Spicy Fresh Tomato Soup!

Last week at the deli at my rehab center I had one of the best soups ever! (for only $.99!!!) The cook that day had made "Creamy Grape Tomatoes Soup." Well here in WI it is definitely time to stock the freezer, can 'em if you got 'em fresh fruits and vegetables while the price is right!! I have 100 lbs of fresh tomatoes (canners & Romas) total price $61. Locally grown organically by the Amish. Wisconsin rules!! I will be freezing them in airtight freezer bags tomorrow so they do not spoil. I will be making most of them into sauce, juice or in with other dishes so this will be perfect for me.

Last night I decided I wanted to try and recreate that soup, quickly- and use anything I needed to get rid of in my fridge AND start stocking my freezer with nice soups for future meals. Well, two out of three isn't bad, I don't think many servings are going to make it to the freezer!!

My 'recipe' is kind of scattered but I think if you have cooked a few times before, you can figure this one out. :)

Ingredients (Fresh is Best!!)
Creamy & Cheesy:
2 cups heavy cream (whole milk or half and half would do)
2 cups shredded cheese, your choice (I used 1.5 cups jalapeno cheese curds + 1/2 cup mozzarella)

Colorful & Spicy:
about 1/2 cup (or more or less) raw onion diced finely
*I used 1/4 cup Vidalia sweet onion + one bunch of diced green onion
peppers: I used 1 cup baby bell peppers, diced
5 fresh green chili peppers
10 cloves fresh garlic, diced
1/2 tsp salt
1/4 cup real unsalted butter (4 TBL)

Let simmer on med/low on stove in separate pan until soft, golden and tender

Tomatoes:

10-12 Medium/Large Tomatoes
1/2 tsp sea salt
2 TBL olive oil
1. Let 10-12 Medium/Large fresh tomatoes simmer in a crock pot (or stock pot) on medium high heat for about 2 hrs, with 1/2 tsp sea salt.
2. Once tender/splitting apart mash in pot with whisk/masher/hand held blender, whatever you have.
3. Transfer to blender/food processor in batches and blend until smooth. Let strain through colander/strainer to separate most pulp/skin and delicious thick juice drain into a large soup pot on top of the "Colorful & Spicy" ingredients

Finish:

1. stir all together, with your choice of herbs of spices.
I used:
2 TBL raw cane sugar
.25 tsp sea salt (to taste)
1 tsp Mexican Chili powder
.5 tsp Spanish Paprika
.5 tsp ground black pepper
1/4 cup fresh green cilantro & parsley diced
2. Once well blended and slightly warm, slowly stir in the "Creamy & Cheesy" portion until wonderful. Let warm (do not scald cream), then enjoy!

I got 11 1 cup servings
Per Serving: Calories:295 Carbs:14 Protein:10 Fat:24 Fiber:2 Potassium:294 Sugar:9 Cholesterol:59 MSG: 0

**If you don't like peppers, garlic, etc don't use them! :) Sweet peppers work great, and the spicy peppers lose a lot of their power once simmered with butter and mixed with the dairy.
***I believe potassium & fiber are higher but am not going to take time to correct the butter, baby bell peppers and anything else I missed in database.
****Natural fats are GOOD for you!!

    miracle i only have 4 or 5 servings left! LOL will have to do again soon..I could today but I'm busy.

    Sounds good, but more fat and sugar than I want in one meal. Maybe on a cheat day :)

    there are ways to fix that :) not for me but i might use different lower fat or stevia or whatever if I want in future.

    Looks good and will taste good on a cold winter day. May have to find a way to lighten it up before I would make a freezer full :wink:
