Soba and Veggies: Low Sodium, Vegetarian

Because I need to watch my sodium, I've been cooking according to that, and I put a few things together and it tastes great, so I thought I'd pass it on. Very simple, as it's pretty much just boiling some water and cooking some potatoes.
Ingredients:
2oz dry Hakubaku Soba Noodles
1/3 cup frozen corn
1/3 cup frozen green beans
1/3 cup frozen carrots
2 small Russet potatoes
2 tsp. JES Yakitori Sauce
You can pretty much follow what to do just by the ingredients! Cook up the noodles and veggies on the stove, cook the potatoes either in the oven or microwave, and mix together. Add the Yakitori sauce to everything and mix until it's lightly covered. You only need a small bit of Yakitori sauce, because it is a strong flavor. It also gives an Asian flavor without using sodium filled soy sauce.
According to my stats here on MFP, this has:
590 calories
124g carbs
2g fat
0 cholesterol
293mg sodium
1,870mg potassium
Things may be different, depending on if you use more vegetables, or a different brand of Yakitori sauce. Some people who are watching their carbs, however, may want to stay away from this, as its a whole mess of carbohydrates in one meal. But for people who have active lifestyles or work out a lot during the week, there's a lot of energy to burn in this plate! (Also if you cut back on carbs later, it evens out! :happy: )

That sounds good...but what's Yakitori Sauce? I've heard of it, but have never tried it. I've been looking for some new recipes and my husband has to watch his sodium. Carbs aren't a problem for us...so this would be perfect!!!0

@khskr1: Yakitori sauce is a combination of Mirin, sake, soy sauce, and sugar. It's usually used for Yakitori, which is a chicken dish in Japan.
@TheMaidOfAstolat: You can substitute a lot of stuff, as the Soba noodles are a great start for many dishes. You can also add meat, like chicken or beef, and it will add a new flavor to it. Also, props on the Rogue love in your avatar and tracker.0
