almond meal cookies
inspired by the 6 calorie cookie (which is more like 96) I made these today! (original thread here: http://www.myfitnesspal.com/topics/show/708524-6-calorie-cookies)

i used almond meal & added coconut and mashed a banana into the whole thing. each cookie is a tablespoon's worth of mixture, made about 25 cookies.
roughly 3c almond meal (freshly ground leftover from making almond milk)
1c sweetened coconut
1 banana
pinch of salt
pinch of baking powder
1tsp bourbon vanilla
edited to adjust recipe: i only used 3c almond meal instead of 3.5

for me, each cookie is about 3-4 "bites". they're quite filling, too. thanks to the OP for the idea! i will definitely make these again!

These look amazing!! If you wouldn't mind, could you tell us the proportions for making almond milk. This looks like a great way to use up the pulp.0

yeah, no problem!
the almond milk is about 3:1 water to nut. i water mine down a bit more because it ends up really thick and very "almondy" which is great, but can be overwhelming if using it for something else, you know?
soak the almonds overnight 3:1
drain and rinse the almonds in the morning
get about 3x the amount of almonds in clean water
in a blender, put your almonds in
add water 1:1
start blender low, moving up a notch to high when it seems like you should
the mixture should be more like a runny hummus at this point. add water little by little until you've used up your 3:1 ratio
pour all ingredients into a fine-mesh strainer (I use a reusable produce bag from the stop n shop) that is situated over a big bowl
squeeze the meal until all the liquid is out.
then what I do (which i don't know if other people do)
i pour all the meal back into the blender and do it again, but like at 1/4 strength... really get all the goodness out of the seed.
then pour into a jug and refrigerate. will keep for a few days, so make small batches if you don't drink much of it.0 -
