Uses for Coconut Oil

We bought a jar of coconut oil today at Trader Joe's because I've heard lots of great things about it. Now I'm looking for recommendations on how to use it. Can it be used as a substitute for any olive or vegetable oil? Looking for any recipes or ideas...thanks!

  • I do use it as a sub for olive oil or canola but do be warned - it will give whatever you cook in it a light coconut flavor. Definitely not a bad thing, though :) I used it to sautee some zucchini last night and it was soooo good. I also have some zucchini brownies in the oven that I used coconut oil for.

Also, it is an AWESOME skin moisturizer. I pour a little off every time I buy a jar into a small tupperware to keep in the bathroom. I use it all over at night. Soaks in well and makes you smell amazing!

I use it for any high heat cooking since olive oil should not be used in that case.

I use my TJs coconut oil to cook my eggs or breakfast, put it on popcorn instead of butter, have fried corn tortillas for tostadas, subbed it for olive oil in a fish recipe, and I use it on my hair! Great stuff.

Coconut oil is amazing on popcorn. When I pop mine with the oil, there is no need for butter or salt, it makes it really flavorful.

I tend to use it for curries and stir fries. The coconut flavour is less of an issue if you're having a nice chicken curry.
