Is there any point in doing sit ups/crunches or any ab exercise if I have a layer of fat covering my abs?

Yes, there is a point
You need to pair cardiovascular work with strength training work. Strength training, like what you are doing with your abs, will build muscle which creates that 'toned'' look but also by building muscle your body will burn more fat at rest. The cardio will help to work off that extra fluff on your stomach.
