Chicken Chili with Black Beans

Serves 5
12 ounces boneless skinless chicken breasts, cubed
2 garlic cloves, minced
1 can (28 ounces) diced tomatoes
1 can (15 ounces) black beans, rinsed and drained
1 onion, coarsely chopped (about 1 cup)
2 large celery ribs, sliced (about 1 cup)
1 green bell pepper, chopped
1 jalapeño chile pepper, seeded and minced
4 teaspoons mild chili powder
1/2 teaspoon dried oregano
8 ounces yellow summer squash, halved lengthwise and cut into 1/2 inch slices
Heat a pot coated with cooking spray over medium-high heat for 1 minute. Add the chicken and garlic and cook for 3 minutes, or until chicken is lightly browned.
Add the tomatoes, beans, onion, celery, peppers, chili powder, and oregano. Bring to a boil. Reduce the heat to low. Cover and simmer, stirring occasionally, for 15 minutes. Add the squash. Cover and simmer, stirring occasionally, for 10 minutes, or until the squash is tender.
