So on my lazy Sunday I was scrounging for food as usual trying to think of what I could make with what I had in the house.
Opened the fridge/pantry and found:
Frozen Talapia
Uncooked Quinoa
Bright Red Bell Pepper
Pesto Sauce
Various Seasoning (Cracked Pepper, Old Bay, Dash of Salt)

20 Minutes later, I had this:

Yields 3 Servings

1. Preheat Oven to 425
2. Bring 1C water to a boil. Once boiling, add quinoa. Add a dash of salt and reduce heat. Let it lightly boil for 20 minutes.
3. Put in Basil & Pesto Talapia from Costco for about 13 minutes.
4. Cut up bell peper into thin slices, spray pan with extra virgin olive oil. Turn heat to medium high. Simmer for 3 Minutes.
5. Add about 1.5 tsb of Pesto Sauce, add seasoning to taste, stir for a few more minutes and take off heat.
6. Plate.
7. Enjoy.
