Grilled Sweet Potato and Green Onion

Hey all,
I do not post new topics much so go easy if I screw up.
We are always looking for stuff to grill that is good for you and super tasty. Veggies taste great grilled and do not kill the waistline line. Here is a recipe we picked up a while back.
Grilled Sweet Potato and Green Onion
-2 med sweet potatoes peeled and chopped into inch-ish pieces.
-I bunch of green onions chopped (skip using a little of the top and stop at the bottom where the onion gets hard).
-2 tbsp of EVOO
-2 big squares of tin foil.
-2 tbsp liquid smoke
-Salt and Pepper (more or less depending on personal taste)
-1 tsp garlic powder or 3 fresh chopped cloves
Take the veggies and split into 2 seperate piles on top of each sheet of foil.
Roll up the sides of the foil but do not seal.
Add the EVOO, liquid smoke, garlic or garlic powder and salt and pepper.
Seal the foil packages up by folding the tops over.
Cook on grill for 20 or so minutes on med to high heat or until the potato breaks apart easily.
Empty the foil onto a plate and you have a great tasting side dish that is good for you.
Personally I love to use additional seasonings like red and black pepper. The hotter it is the more I like it.
Feel free to experiment as this is a pretty easy one.
