Healthy meals without a fridge?

Hi,

I'm in the process of moving house. We used the landlord's fridge in our old place and will have a gap of 4 days until our fridge/freezer is delivered. I keep pretty much all my healthy food in the fridge or freezer so I have no clue what to eat over those 4 days without resorting to takeaways. I'm vegetarian and aiming for 1200 calories/day. Any ideas?

Thanks,

Jen

  • Rice cakes, microwaved meals like whole wheat pasta, potato, brown rice, fruit like oranges and apples that don't have to be in the fridge all the time... Get some weigh less crackers, cheese, etc

Bean soup, peanut butter sandwiches, salads, fruit and vegetables.

Worst case scenario, just go to the supermarket before you start making dinner to buy perishables for the day.
  • hummus, pakoras, very hot spicy and delicoous chickpeas, stuffed tomatos, eggs and egg-based dishes (they don't actually have to be refrigerated), bruchetta

Tinned fruit and veg (make sure it's canned in water or juice, not oil/syrup etc) will be fine to bulk up your meals and replace the fresh fruit and veg -- it's only for a few days.
