"Burger Salad"
I kinda threw this together one day and I eat it all the time now.
Take two Morning Star Spicy Black Bean Burgers. Microwave until heated and put them in the fridge to cool to room temp so they dont make the lettuce soppy.
You can mess around with the salad, put in whatever you want.
While they cool:
I use alot of lettuce, like a ton bc its filling and low cal, but 2 cups should do, shredded, in a large bowl.
1/4 a cup of edemame beans (if frozen, cook and put in fridge)
1/4 cup of corn
a sliced roma/whatever kind of tomato
onion, if you'd like
etc. :P
Then cut up the burgers into strips then small squares.
Dump everything together and add a SMALL amount of your dressing.
I use 2 tbs wishbone ranch and 2 tbs sweet oil and vinegar dressing. then put on top of salad I use my clean hands to mix in (its messy i know, but you can mix it however you want)
Its like 350 cal for me in the end, and you need such a small amount of dressing bc the burgers are SO flavorful.
not good at writing recipes, so I hope this is okay hehe, Ill post a pic this afternoon, Im making one for lunch :P
