How do you figure it out? Do you just use the online calculator to estimate? Or do you keep upping the weight and see if you can lift it?

there's a million calculators out there. There's going to be a little guess work with any 1RM calculator, but generally they'll get you close to your theoretical max.
And no, it's not advisable to keep trying to lift until you can't do it, that's a good way to injure yourself.0
