Reaching the Calorie Goal

I'm finding it hard to hit my calories everyday! I started to workout (Jillian Michaels last chance workout) plus I go to the gym when I can, 2 or 3 days a week, and I walk 2-3 times a day. After all is said and done, I'm finding I still need to have between 200 and 700 calories, depending on what I do physically that day, and I'm just not hungry enough to eat anymore! I don't really want to not workout since I feel great and I'm toning, but I don't want to be so far away from my calorie goal. Any tips that can help with this????
