Zucchini and Carrot Pancakes - Answers to some questions
Hi all,
I received lots of wonderful comments about this recipe and several questions. I thought I would answer them in a new post to make it easier for y'all to read, without having to scroll through 5 pages.

1. Can you freeze these? - Yes, yes... you can absolutely freeze these. I separate them with a square of waxed paper and then freeze them wrapped in Saran in bundles of 5 and stored in freezer bags. I can either take out a whole bundle, or one at a time.
2. Are they crispy after freezing? No, they aren't crispy. I usually just break up the frozen ones and add them to an omlette or scrambled eggs.
3. Can you use them in sandwiches? - Yes, they are delicious cold with a little mayo on either a bun, toasted corn tortilla. I love them with some sliced cucumber on gluten free bread. Sometimes, I just eat them cold as is. I used them in fried egg sandwiches or tuna sandwiches. I just top the tuna with a couple of pancakes. Obviously I make large batches and freeze.
4. Can you change the ingredients? - Yes, I used Egg Beaters, but you can substitute whole eggs or 1 egg and 1 egg white. Sometimes if I have some corn niblets left from dinner and I will add it into the pancake batter. I will post a picture of that on my blog next week. All out of corn now.
5. Why do I have to put in salt? - Mixing the salt with the shredded zucchini, draws out any bitterness and extra liquid so your batter won't be runny. I don't use flour and don't want to use more than 2 Tablespoons of cornmeal, so I make sure to drain them well. You could cut down on the salt to 1/2 to 3/4 teaspoon. Mix the salt into the shredded zucchini very well and place into a paper towel lined colander. I use the colander part of my small OXO salad spinner for this. Let sit for 30 to 45 minutes. I tilt the colander as it sits in the bowl to allow the extra liquid to run out quicker.
