Slow cooker recipes (low cal) HELP! :)

Does anyone have any good low cal and low sodium slow cooker recipes?! Pref. somthing chicken cause i dont eat red meat. THANKS! :wink:

    There was one posted here a few weeks ago that I made and it was fantastic!

    Salsa Chicken? Taco Chicken? Call it what you want :)

    1 lb of chicken
    1 packet of low sodium taco seasoning
    1 cup of salsa
    1 can of healthy choice cream of mushroom soup

    Put a few chicken breasts in the slow cooker and cover them with taco seasoning. Then layer on the salsa and cream of mushroom soup and cook for 8 hours (Mine went 10 hours because I was at work and it was still amazing). Serve with brown rice, low sodium black beans, or even in tacos. Delicious!

    Also, I didn't have a whole cup of salsa so I added some crushed red tomatoes left over from the night before and chopped up some pickled jalapenos and threw them in there. Added some spice.

    Pork Chili Verde

    This is fanstastic! Similar to Salsa Chicken already posted here. Makes 4 - 1cup+ servings

    1 lb pork (chops, boneless) cut into cubes

    1 jar Green Salsa

    1 small can diced green chilies

    1 yellow onion diced

    1 can Rotel (Hot)

    1 can beans, rinsed (I used garbanzo, black or northern would be good too)

    Layer all in crock pot – cook on low 8-9 hours.

    Serve with sour cream and shredded cheese.

    I made something similar to what has been listed for my husband (I'm a vegetarian) and he LOVED it:

    1 chicken breast
    1 cup spicy salsa
    sliced green peppers
    sliced onions
    1/4 - 1/2 cup fire roasted tomatoes

    let it cook in the crockpot all day then served it with tortillas - kind of like chicken tacos. Recipe could easily be adapted to feed more people too!
