New to Weights, Not sure what to do /how to start, HELP !

I've been reading a lot about how lifting weights helps to drop weight, build muscle and lose fat.........I know this and I've always known this, but my complex is that the scale goes up when I lift and that freaks me out!

Not really knowing much about it, types of exercises, the right weight, reps etc - I need help figuring out a routine, I see a lot of trainers and stuff on here I was wondering if anyone could help me custumize a program. Please reply to this feed or send me a message so we can discuss. I am so motivated this time to stick to it I just need some knowledge on how to change things up.

I had a feed yesterday about my food intake, apparently I wasn't eating enough and maybe working out too much so I wasn't losing weight, I completely plateaued for two weeks now and that usually discourages me but I've kept eating healthy and now I'm trying to eat at least 1200 "good choice" calories a day, just need a little help with the work outs, cause right now I am cardio crazy and my body is getting used to it so the results are slowing down.

With a little bit of background, I re-injured both knees about 4 months ago and they are slowly getting better but I can't go up and down stairs really well, no jumping and if I do leg extensions with any kind of weight my knee dislocates, please keep this in mind when making suggestions.

Equipment I have at home:

treadmill
weight bench w/leg extension
dumbbells
recumbant bike
upright bike/elliptical
medicine balls
and a bunch of cardio dvds
