You want frozen, guilt-free, portion-controlled treats? YOU GOT 'EM! These recipes don't actually contain any ice cream, but they'll DEMOLISH a craving for ice cream sandwiches STAT...




Frozen Cannoli Sandwiches
1/8th of recipe (1 sandwich): 133 calories, 2.5g fat, 161mg sodium, 24g carbs, 0.5g fiber, 13.5g sugars, 4.5g protein -- PointsPlus® value 4*

Freezy-cool sandwiches inspired by a beloved Italian dessert just seem right in the summertime. Are we wrong? (Pretty sure we're not.)


Ingredients:
1 tbsp. Jell-O Sugar Free Fat Free Vanilla Instant pudding mix
1 cup fat-free ricotta cheese
2/3 cup Cool Whip Free (thawed)
2 1/2 tbsp. granulated white sugar
1 tbsp. powdered sugar
1/8 tsp. vanilla extract
2 tbsp. mini semi-sweet chocolate chips
8 sheets (32 crackers) low-fat cinnamon graham crackers, broken into 16 squares

Directions:
In a medium-large bowl, mix pudding mix with 2 tablespoons water until slightly thickened. Add ricotta cheese, Cool Whip, granulated sugar, powdered sugar, and vanilla extract. Mix until smooth with an electric mixer set to high speed, about 1 minute.

Stir in chocolate chips. Cover and refrigerate until chilled, about 15 minutes.

Evenly divide ricotta mixture among 8 graham cracker squares, and top each with another square. Freeze until firm, at least 1 1/2 hours. Enjoy!

MAKES 8 SERVINGS

HG Alternative: Can't find low-fat cinnamon grahams? Get regular cinnamon graham crackers instead. Just add 5 calories and 0.5g fat to each sandwich's stats.





Freezy Tart Peach-Cobbler Squares
1/2 of recipe (1 sandwich): 99 calories, 1g fat, 88mg sodium, 20.5g carbs, 1g fiber, 10.5g sugars, 1g protein -- PointsPlus® value 2*

These taste like we put peach cobbler a la mode in the blender, and then sandwiched that between graham crackers! Thankfully, ours have WAY fewer calories and fat grams than those fantasy treats would...

Ingredients:
1/3 cup peach slices packed in juice (about 4 slices), drained and blotted dry
1/4 cup Cool Whip Free (thawed)
1/4 tsp. cinnamon
1 no-calorie sweetener packet (like Splenda or Truvia)
2 sheets (8 crackers) low-fat cinnamon graham crackers, broken into 4 squares

Directions:
Place drained peach slices, Cool Whip, cinnamon, and sweetener in a small blender or food processor. Pulse until mostly smooth.

Transfer to a small bowl and freeze until slightly firm, about 20 minutes.

Lightly stir and evenly divide mixture between 2 graham cracker squares. Gently top each with one of the remaining squares.

Freeze until filling is firm, at least 1 hour. Yum!

The Chilly Chipper
Entire recipe: 228 calories, 4g fat, 186mg sodium, 44.5g carbs, 1g fiber, 14g sugars, 2.5g protein -- PointsPlus® value 6*

This freezy-licious goodie was inspired by Ben & Jerry's Late Night Snack ice cream. Because (admit it!) you're dying to try a frozen sweet treat crammed with salty snacks...


Ingredients:
1/3 cup Cool Whip Free (thawed)
1/2 oz. (about 8) reduced-fat salted potato chips, lightly crushed
1 tbsp. light chocolate syrup
2 full-sized caramel-flavored rice cakes

Directions:
In a small bowl, stir crushed potato chips into Cool Whip. Gently swirl in chocolate syrup.

Spoon mixture onto one rice cake, and spread into an even layer. Top with the other rice cake.

Freeze until filling is firm, at least 1 hour and 15 minutes. BITE!

MAKES 1 SERVING

    Great low-cal recipes, but usually high in sodium. Might wanna makeover some of them a little bit more than she does just to bring that sodium count down.
