Crispy Quinoa Tilapia

1 4 oz tilapia filet

2 tbs egg whites

Few shakes seasoning of choice ( i used a premade 'beercan chicken' spice blend)

2tbs crispy quinoa ( ive only seen this at Whole Foods in the bulk bin- this is NOT the quinoa flakes you use to make hot cereal. I dont know if they would be as good)

Season egg whites with a few shakes of yourseasoning of choice

Dip fish in egg whites

Coat fish in crispy quinoa

Cook on medium heat, i used a cast iron pan and did about ten mins per side, but this will vary. Just cook it tilthe fish is done and tender but not dry :)

Eat. :)

I dont know the macros, sorry-i dont keep track of those. One four oz breaded filet is about 150 calories. The calories for tilapiavaried on the net, but the consensus seems to be 110 for four oz? If someone has a better number, pls let me know. The amt of egg white is negligible, and 2 tbs of crispy quinoa is about 32 cals.
