Making your own lunch meat?? Need help please.

So I have an idea to roast a turkey tenderloin, maybe a pork one as well. Then slicing them like lunch meat. I have a slicer and a food saver vacuum sealer. Has anyone tried this? I was thinking I could put them into smaller portions in vacuum freezer bags and throw in the freezer. Store bought lunch meat is just loaded with so much flippin sodium. Tryin to get away from that.
