Low Carb Pancakes - Almond Flour?

I found this recipe for low carb pancakes. It calls for using almond flour or almond meal. I have never tried either ingredient before and was wondering if anyone out there has made pancakes in this fashion before - and if so, what did you think?

I enjoy almonds and almond milk so I'm hoping that this recipe will be an acceptable low carb pancake for me and my son.

1 cup almond meal or 1 cup almond flour
2 eggs 1/4 cup sparkling water (you can use flavored)
2 tablespoons oil
1/4 teaspoon salt
2 (1 g) packets Splenda sugar substitute

Directions: 1 Mix all ingredients together. 2 Cook the batter as you would pancakes, be careful not to burn them as you might not get the regular bubbles. 3 Serve them with sugar-free syrup.

    Hi, that is the recipe I use. I usually put blueberries in there also
    . I overate them this week, I had about 5, but I lost 3.8lbs so hey!
